In a medium skillet, melt butter. Add brown sugar, honey, nutmeg and cinnamon; mix together. Add Carrots. Cover; cook on medium low to medium heat for about 15 minutes.
In a saucepot, steam baby carrots in 3 cups of water until tender.
Cook carrots until tender, drain. In saucepan place pineapple tidbits and juice, cornstarch, sugar, ginger, nutmeg and butter. Cook stirring until thickened and clear.

Clean and trim carrots. Cut lengthwise and quarter if the carrots are large. Combine remaining ingredients in saucepan. Bring to boil, add carrots and cook over low heat.
Sift together dry ingredients except sugar in medium bowl. Beat in large bowl: eggs, oil, sugar, vanilla and baby food until light. Add pineapple.
Steam the baby carrots in a saucepan with 1/4 inch of water until crisp-tender, about 4 minutes. Drain and toss with the butter and nutmeg. May also be prepared in the microwave.

Boil carrots with sugar until tender. In casserole dish melt cheese and butter. Drain carrots, add to cheese mixture. Top with crushed Ritz crackers and melted butter. Bake at 350
