The Workshop Brewing Company, Traverse City, Michigan
The Workshop Brewing Company Manifesto is to “preserve Northern Michigan’s spectacular natural environment, to reinforce Traverse City’s warm and vital community, and to honor traditional craft.” It’s apparent at first glance that the brewery earnestly tries to accomplish all three. Every beer is made with Michigan and/or organic ingredients wherever humanly possible.
Workshop’s foods are specifically crafted to complement a particular beer and many of the foods include beer in the recipe. The guesswork has been taken out of ordering; all beer suggestions are listed alongside food choices.
For example, Alottafrickin Nachos are just that, a layered mountain of slow-cooked beans, tortilla chips, roasted poblano queso, house salsa, and your choice of slow-cooked pulled chicken, veggies, or house-smoked pulled pork that pairs nicely with the Ten-Pound Sledge 5.5% ABV English IPA.
Or, try the Tenpenny American Blonde Ale with the house-made, soft-baked spent grain pretzels served with beer-cheese fondue and mustard aioli.
