Hillsdale Brewing Company opened to a lot of fanfare, its Facebook page amassing over 2,000 likes before the doors ever opened. Housed in an old hotel/brothel (a.k.a. “house of ill repute”), the building’s character still exists. However, now, the attraction is legal and very tasty.

Hillsdale Brewing Company has 8 brews on tap, each made in small batches. It is also a full-service restaurant that offers a delicious variety of sandwiches, flatbreads, build-your-own mac and cheese, and even a menu for your little travelers.

For starters, try the amazing Zucchini Sticks, coated in Italian cheese and lightly seasoned bread crumbs, or the White Cheddar Cheese Curds made from natural Wisconsin white cheddar, coated in a flavorful homestyle breading.

All the “Slammin’ Sammies” can be constructed on your choice of sourdough or multigrain bread, toasted or Panini-style, and served with house-made kettle chips. Hillsdale’s take on the standard B.L.T is the B.L.A.T: Thick-cut bacon, crisp lettuce, tomato, and avocado topped with garlic aioli. The Bird Is The Word is an appetizing build of house-roasted turkey breast, fresh avocado, lettuce, and tomatoes topped with house-made chipotle aioli.

However, there is no Hillsdale Brewing Company without the brew! The Charger IPA is brewed with a combo of four hop varieties, including Amarillo hops, carrying a citrusy and piney aroma with medium bitterness and grainy flavors. For the cookie addicts in the room, the Oatmeal Raisin Stout is a medium-bodied beer rich in oatmeal, raisin and coffee flavors, with hints of chocolate and a dry finish. The rest of the brew collection here is a mixture that will surely satisfy the snobbiest of beer drinkers.

And new to the brew bash at Hillsdale is Sporcle Live Trivia – two games of general knowledge trivia every Tuesday with prizes to the first and second place teams from each game!
