Welcome to Hopskeller Brewing Company! Located in Downtown Waterloo, Illinois, Hopskeller is the brainchild of Matt Schweizer, a former History teacher, whose popular homebrews caught the attention of several local and civil business leaders. Those brews, inspired by Matt’s experiences living in Northern England and the Pacific Northwest, are the foundation of Hopskeller. After many successful private gatherings, demand grew for his beer to become available to the public.

And so, Hopskeller Brewing Company was born. The brewery is located in a building as unique as the brew. The heart of the building, the mezzanine overlooking the bar, befits it’s calling to have Hopskeller’s tantalizing tastes served atop its massive pine wood beams.

Robust Brews

From the ales to the English-style beer, the IPA, and the Porter, you can savor the intricate combination of aromas and flavors, and each one is carefully crafted to create an experience like no other.

The Tower Hill Burton English-style beer perfectly blends a moderate hop aroma to show through a blend of roasted and deep caramel malts, finishing dry with a caramel and nutty aftertaste. The “Illinois Common” Ale is anything but common, combining sweet, earthy and drinkable that’s a perfect complement to any of Hopskeller’s wood-fired pizza.

Speaking of Pizza…

All of Hopskeller’s Pizzas are handmade, wood-fired, and each one is as distinctive as the beer with quality ingredients like garlic-infused olive oil, wild mushroom, anchovy, and caramelized onion. There’s a variety of toppings to add to cheese, or you can choose a variety of preselected combinations such as Helter Skelter – sausage, pepperoni, sweet cherry pepper, and bleu cheese; L.A. Woman – smoked chicken, wild mushroom, red onion, and olives; or, Hopskeller’s version of the Margarita, called the Simple Man.

Beer cheese soup, chicken Caesar salad, hot dogs, sausages, brats, Tequila lime chicken nachos and cheese bread are also on the menu to tempt and satisfy.

Whichever food option you choose, you won’t be disappointed!

Social Hour

There’s no shortage of social sides to accompany Hopskeller’s beer, with a regular schedule of entertainment and specials:

  • Sporcle Live Trivia Tuesdays at 7 and 8 PM
  • 1/2 off Growler refills on Wednesdays
  • Thank you Thursdays with 50-cent drafts from 5-9 PM and 1/2 off food from 10-midnight
  • …and 1/2 off food from 10-midnight on Fridays and Saturdays!
