	Geek is actually more generic than just biting the heads off chickens (although that has become the popular terminology- other than the guys that fix your computer at Best Buy). They would swallow all sorts of things, sometimes able to regurgitate specific items upon request. There are also specialized geeks, like the blockheads (who hammer nails into their nares). Also part of the side show, like the bearded lady, tattooed lady, strongman, fakhir (they lie down on beds of nails for the amusement of others), etc. Yes, they may be associated with carnivals more, but the sideshow used to be a staple of the circus as well!
