I'd syllabify
Nicaragua
as Ni.ca.ra.gua rather than Nic.a.ra.gua. (See, e.g., http://www.merriam-webster.com/dictionary/nicaragua; they give Nic·a·ra·gua for the hyphenation pattern, but ˌni-kə-ˈrä-gwə, ˌnē-kä-ˈrä-gwä for the pronunciation guide.)

This is fun. Israel seems problematic because in some dialects (including mine) it's two syllables. I'm not sure there's anything you can do about that short of replacing it with a totally different country, though.

Palau is possible from the beginning, threw me off a bit. I wouldn't change anything, though, as I think all the affected countries are great additions. Good quiz!

Palau isn't possible because it is only two syllables. There is no Pa, Lau, or Pal, Au (depending on your dialect). There's only Pal, A, and U, but the A and U separately don't form syllables.
