I think that is because this source excludes Taiwan which, despite being claimed by China, is de facto independent.

Last one took me a while to figure out. This is one of those things Sporcle really managed to teach me - world city quizzes are impossible otherwise!

Does every quiz about China have to get into a Taiwan/China debate? For the purposes of Sporcle, Taiwan is considered a country—it's consistent with the "countries of the world" quiz.
