How about Rancho Santa Margarita in Orange County? They incorporated in 2000 and had a population of 47,000+ at the time, and are probably substantially bigger now. The "Santa" prefix is in the city name, even though it's not at the beginning of the name.

Cool quiz. Maybe throw in Santa Fe Springs, at least as a bonus. My atlas also lists Santa Margarita, Santa Ynez, and Santa Venetia, but I see that they are not in the Dept. of Finance link. Not incorporated, I'm guessing...
